Monettes restaurant welcomes new chef, general manager

Monettes Artisan Fish and Steak restaurant at Mauna Kea Beach Resort has made two key appointments to its management team, founder and co-owner Scott Monette announced.

“We are delighted to announce Michael Minshull, most recently with the prestigious Hotel Grand Pacific in Victoria, British Columbia, will take over the reigns as Chef de Cuisine effective today,” Monette said.

The European-trained Minshull replaces Matthew Zubrod, who, under the direction of Executive Chef Mark Monette, served as the chef since Monettes opened its doors in 2009.

Zubrod, he said, is returning to the mainland for personal reasons and will continue his successful career in California.

Minshull brings years of experience and passion to the post, Monette said, as well as a strong commitment to showcasing only the finest local and internationally grown products available – a commitment that matches Monettes philosophy.

“His knowledge and experience working in some of the world’s best kitchens with the ultimate products – local, regional and global – makes him a perfect fit for us,” Chef Mark Monette (co-owner and founder with brother Scott) said.

A certified sommelier, Minshull is a master at balancing ingredients and flavors to pair beautifully with the wines he recommends diners enjoy with his dishes.

“Food and wine are intended to complement and inspire one another – one of the things I enjoy most in creating dishes in the kitchen is ensuring that precisely that happens at the table,” Minshull said.

Having worked with numerous restaurant recipients of the prestigious Wine Spectator “Best of Award of Excellence” awards, Minshull adds yet another to his collection with his move to Monettes.

The restaurant, with its vast collection of library, large format and rare vintages, representing some of the world’s finest wines, was honored with the Wine Spectator award in 2010.

Working closely with Monettes’ culinary team, as he has from the start, Chef Mark Monette said the innovation and quality Monettes’ guests are accustomed to will exceed expectations moving forward.

“One of our goals is to elevate awareness worldwide of the outstanding products cultivated here in the islands, and particularly on Hawaii Island, by placing them alongside internationally acclaimed seasonal delicacies sourced from around the globe,” Scott Monette said.

Minshull said he can’t wait to “play with” the best of Hawaii’s homegrown ingredients and specialties from around the world to create exciting new dishes to complement the current menu.

“It’s not only the variety of food products available right here, but the quality that is amazing,” Minshull said. “How great is it to have products – fantastic and ultra-fresh island grown coffee, vanilla and chocolate – that are not grown anywhere else in the United States nor my native Canada to work with? I love it!”

Minshull’s appointment comes shortly following the recruitment of Oahu native and veteran restaurant professional Barry D. Chu to serve as Monettes General Manager.

Chu joined the team this month and most recently served as general manager of Duo restaurant at the Four Seasons Resort Wailea on Maui.

“With a career spanning more than 35 years in management positions at many of the state’s most prestigious restaurants and resorts – and a personality that exudes enthusiasm and aloha – we are thrilled to have Barry working with us,” Scott Monette said.

Monettes, founded by brothers Chef Mark and Scott Monette in early 2009, is the flagship restaurant at Mauna Kea Resort. The brothers also own and operate the award-winning Flagstaff House in Boulder, CO (celebrating its 40th anniversary this year).
