From bean to bar: Chocolate candy-making at home

Chocolate candy-making for the home processor and food lover is the subject of classes offered at Kuaiwi Organic Farm of Captain Cook.

Taught by Leon Rosner and Una Greenaway, the classes will cover how to take the fermented, dried cacao bean through the six basic steps required to become chocolate candy.

The two-morning course, during which the participant will have hands-on experience in all aspects of candy making, includes plenty of tasting, and a goodie bag of candy to take home.

Included will be a handout illustrating the steps taken and equipment needed.

Class also includes a tour of Kuaiwi Farm organic chocolate orchard, and a brief intro to harvest and fermentation.

It is scheduled for 9 a.m.-noon, Tuesday, July 21 and 9 a.m. -1 p.m. Wednesday July 22. Lunch is included Wednesday. Class size is limited to 10 and costs $75.
